To prepare the Cordial: Combine all the ingredients into a pan, bring to a light boil, stirring so the sugar melts. After that, turn off the stove and leave to cool down entirely. Transfer into an sealable bottle, seal and store in the refrigerator, it can be stored for around one month.

To make Batch Mix: Mix every liquids into a large bottle, allow it to infuse for 60 minutes, then filter it preferably using muslin, to ensure it's completely strained.

When ready to serve: Measure 85ml from the batch mix to a mixing glass containing ice, gently stirring gently for one minute to chill. Filter into a chilled martini glass or similar, garnish with a few cranberries and complete it using a light spray with the mandarin essence over the drink.
